Marc Wölffer is one of Wölffer Estate’s co-owners, the son of founder Christian Wölffer and the brother to co-owner Joey Wölffer. Marc has managed restaurants in Manhattan and Havana, Cuba. In addition to Wölffer Estate in the Hamptons, Marc also owns vineyards in Spain and Mendoza, Argentina, where Finca Wölffer Rosé and Finca Brau are grown, aged and bottled. • Fresh Dorade or similar white fish
• Oil of choice
• Sweet Pepper of choice
• Cherry Tomatoes
• Aluminum Foil
Summer in a Bottle 2019 Serve chilled, accompanying this dish. This Rosé complements the main-course fish with its lovely balance between the fresh fruit, fine tannins, good minerality and graceful acidity.
