Kick 2019’s Grilling with Roman series with beloved chef Jacques Gautier of Palo Santo. Bringing a taste of Latin America with a little Caribbean flare, Jacques and Roman, longtime friends, will put on a show behind the grill making this one flame-filled asado to remember.

Palo Santo’s Chef Jacques Gautier draws his influence from Caribbean family roots as well as his extensive travels and time spent working in renowned restaurants. His eclectic cooking expresses a versatile understanding of culinary tradition. Dishes maintain their original essence, with a new take on ingredients, technique and presentation. An avid home gardener himself, supporting local, sustainable agriculture is of utmost importance to chef Gautier. For one joyous evening, join Roman Roth and Joey Wolffer, in collaboration with Cherry Bombe and Traeger Grills, for a celebration of hot grilling and cool chefs. Elizabeth Karmel, the celebrated grill master; Kia Damon, Cherry Bombe’s Rookie Chef of the Year; and Yossy Arefi, baker extraordinaire, will serve up their seasonal summer specialties as part of of this one-night-only dinner.

North Carolina native Elizabeth Karmel, a.k.a. Grill Girl, is a nationally respected authority on grilling, barbecue, and Southern food. She is the author of three acclaimed cookbooks, and her fourth, Steak and Cake: America’s Favorite Saturday Night Meal, was just published this spring. She is the founding Executive Chef of Hill Country Barbecue Market in Manhattan, Brooklyn, and Washington, D.C., where she developed the award-winning menu and flavor profiles from the meats to the sides and desserts. Kia Damon is the executive chef at Lalito in New York City. Her praxis in the kitchen hinges on the mutual empowerment of those around her, uplifting marginalized voices in the food and service industry whose liberation are tied up in her own. Yossy Arefi is a Brooklyn-based baker, cookbook author, and photographer. Originally from Seattle, she moved to New York where she worked in restaurant kitchens honing her baking skills for a few years before hanging up her apron and picking up her camera full time. She launched her site Apt. 2B Baking Co. as a way to combine her love of photography and baking. Yossy is known for her galettes and started the social media baker collab known as #summerofgalettes. Join Roman Roth and Paul Donnelly for an awe-inspiring grilling experience straight from Chinatown! In iconic Chinese Tuxedo style, Paul and Roman will be serving up delicious dim-sum served Chinese banquet style among the vines. 

Paul Donnelly is the executive chef of Chinese Tuxedo on historic Doyers Street in New York’s Chinatown, which received a glowing two-star review from The New York Times in early 2017. Originally from Glasgow, Scotland, Donnelly spent the early years of his career in kitchens throughout Southeast Asia and Sydney, Australia, working for world-renowned chefs such as Gordon Ramsay and David Thompson. A New York transplant since 2016, Donnelly pushes the boundaries of New York’s Chinese cuisine, creating classic and modern dishes rooted in traditional Chinese culture. Beyond his time spent in the kitchen, Paul pursues an interest within the fashion and art worlds of New York, and devotes time each year traveling back to Australia and Southeast Asia to visit family and reconnect with the many cuisines of the region.
