Join us for an intimate and rare opportunity with Winemaker Roman Roth on Sunday, February 26, at 5:30 pm, as he takes you through a sumptuous five-course dinner paired with some of the best vintages of our Wölffer Estate Cabernet Franc. Cabernet Franc on Long Island, when well-tended in the vineyard and blessed with amazing vintages, can bring forth one of the most exciting and interesting Long Island wines. The best years on Long Island gave us wines that should be shared with the best wine connoisseurs and collectors. These select wines have been hand-picked by Roman after years of aging in the dark cellar and will highlight the longevity of Wölffer wines.
The journey through these special vintages and their harvests will be narrated by Roman throughout the meal and highlighted by expertly paired dishes from Chef Brian Cheewing. Menu and pairings are as follows:
Course 1: Roasted Beet Carpaccio with watercress, caramelized shallot vinaigrette, goat cheese

Course 2: Seared Diver Scallops with parsnip purée, wild mushrooms, black truffle pearls, micro basil

Course 3: Braised Lamb Ravioli with broccoli rabe, sun chokes, natural jus
2002 & 2004 Wölffer Estate Cabernet Franc
Course 4: Long Island Duck Confit with braised lentils, shaved pears, cherry compote

Dessert: Blood Orange Cheesecake with fennel chutney, mint, lavender honey
